What are truffles?

Truffles are ectomycorrhizal fungi and grow in a symbiotic relationship attached to the roots of certain living trees. Truffles have always been revered and date as far back as 1600 B.C. These special funghi are known as the “diamonds of the earth.” There are several different kinds of species of truffles. The most revered truffles are the Aestivum Vitt., Uncinatum, Magnatum Pico, and Melanosporum.

What land can grow truffles?

The ideal site has a suitable soil pH range between 7.5 and 8.3; however, the ideal pH level is 7.9. If the natural pH of the soil is not within this range, you will need to add lime to raise the pH. In doing so, it may take 2 or more years for it to take full effect on the soil.

Truffles prefer to grow in climates that have hot summers, warm springs, and cold winters. Extreme weather (humidity, snow) does not support successful truffle growth.

In the U.S. areas such as California, Oregon, Washington, Texas, Oklahoma, and Idaho have climates to support successful truffle growth. Our proprietary program will determine if your location can be just as successful as other
proven areas.

How do I use truffles?

Truffles are a precious and rare food and should be the focus of the dish. They best pair with dishes that are more delicate in flavor in order for the truffles to stand out. Traditional dishes such as risotto, eggs, and pasta are the most common and popular offerings for that very reason. However, in today's culinary world, creativity with truffles is at an all time high, with pairings found in a variety of cuisines and dishes.

There are a variety of ways to incorporate truffles into a dish. You can infuse truffles with foods such as eggs and cheese - anything porous will adopt the truffle aroma. You can cook with truffles, specifically the melanosporum, as it has a more robust flavor and can handle some heat. You can use a grater to grate truffles onto a dish, allowing for truffles to cover a larger surface area and be in every bite. And of course, the classic approach of shaving truffles onto a finished dish.

How do I store fresh truffles?

We recommend wrapping truffles individually in a paper towel and store them into a sealed container in the refrigerator. Each day, re-wrap in new paper towels, to keep the truffles dry. If your truffles are slightly older, you may store them in rice to draw out excess moisture. Do not store newly harvest truffles in rice, as this will draw out too much moisture, causing the truffles to dehydrate.
